Does anyone here make fish stock from the heads and carcasses of panfish? I keep saying I’m going to try it but by the time I clean the fish I’m tired and just throw them out.
Have not done that with fish.
I used to work with some religious sisters that ministered in the Amazon. They said they regularly made fish stock with the fish heads and we used to supply one of the sisters that moved back home. I never tasted it, but she loved it.
Panfish we have not. Bigger fish (cod, stripers, and such) we do make chowders from the fillet remnants, boiling them in a cloth to keep control of the bones. Panfish remnants usually go in the garden or to the bride’s chickens, for processing before the garden. ![]()
