Just wanted to ask all you wonderful people to get out your fave fall recipes and send them to LadyFisher…Don’t put this wonderful feature to waste !!
While I don’t know any great fall recipes off the top of my head, I’d like to support this idea. I’m sure you guys have some great ones, why not share them. (I’m not pointing any fingers at Joe Valencic, cause I can’t stand cabbage or eggplant, but some do…)

Believe it or not, there are some foods that I don’t care for, but would probably eat, ONLY if my life depended on it. Okra comes to mind for one, and collard greens don’t sound very appetizing either. BUT, cabbage and eggplant are real treats for me, as well as calf & chicken livers smothered in onions, and rice sausages (I grew up with Yugoslav ethnic cooking).
Just recently I went cook-crazy when I had a couple days without any jobs. I took a fresh picnic ham, removed the skin and put a seasoning rub that I concoct from whatever is in the spice cabinet that day. I let it marinade for 8 hours then popped it in the oven overnight for 8 hours at 225 degrees. WOW, did the house smell great when I got up at 0600. Mmmmmmmmmm GOOD, Pulled pork smothered in Sweet Baby Ray’s BBQ sauce, and fresh cole slaw (sweet style). Ever have that for breakfast? Sure beats shredded wheat and a banana.
Then, I decided it was time to make another treat. Can you guess what these are?
Ha, ha, ha, ha. I knew I could get to you. Yep, those are my favorite fall/winter treats. Good old piggies in a blanket. (I don’t waste time making those woosy little cabbage rolls. Mine are a meal in a cabbage leaf)
Then (if that wasn’t enough), I took the remaining cabbage and chopped it up along with a whole sweet onion and 5 potatoes cubed, and made potato cabbage soup. Again, the house smelled WONDERFUL.
All good things must come to an end, and my work load picked up to end my cooking spree. At least I have all that food in the freezer just ready for the first cold evening of Fall.

Crockpot Cowboy Stew;
Get all your veggies and browned stew meat in the crockpot, use redskin taters chunked up with the skin on.
Cover the stew with BBQ baked beans and cook on low about 7 - 8 hours. After a day of beating the brush for Grouse it don’t get much better! Or, in Joes case a day of Steelheading!
Anyone know a good receipe for salmon jerky?

There’s only a few things left in the garden.
One is swiss chard which is the first thing in and the last thing out. A real staple in our house
An other is eggplant… It’s still there because I refuse to pick it 8)

That made me unsure of my menu this evening…Now I want to make some Lasagna !! Now Norm ? Have you ever had Lasagna made with Cottage Cheese ? Because I for one have not. My mom always used Ricotta…any input on this ?

I don’t know if my mom used a similar recipe for her lasagna, but it did have cottage cheese and I always loved it!

The yougn’s like it, but poor Mama don’t like climbing up the back end of the cow. She slipped last winter and threw out her hip. I had to get her sister to come in to scrub the floors and do the laundry, cuz it was cutting into my fishing time.

Halupkie or Galumpkis; depending on your ethnicity here in my my neck of the woods. You ain’t a real northeast Pennsylvania, (NEPA) resident or coal cracker unless “piggies” grace your table FREQUENTLY! My mother-in law does them justice and the same size as yours Joe!

i think there were comments from folks that never tried it that way but when they did they likes it.
When I replace ricotta with cottage cheese, I have to blend it and add an egg white or 2 depending on how much I am using. Sometimes I add some parmisean or asiago depending on what I am cooking.
I like Spicey black bean soup and a big chunk of corn bread. After a cold or rainy day on the water. Warms you right up.
