Just a question though, if it’s a hen, shouldn’t it be Galena de Leon, Hen of Leon. Just wondering if you might know the correct Spanish term.

I got the skin from Lakeland Ron, and they call it Coq-de-Leon hen, my Spanish is minimal, just what I got from old western movies, very dubious. My French is much better. I spent 2.5 years of my Air Force service in France, that was before De Gaulle took the huff and booted NATO out of France, but I do like French cuisine, and this is one of my favourites. :(:mad::p;):D:D
