Raisin Pie

I had noted about a while ago about a raisin pie recipe handed down from Grandma to mom and I just love it. I'll drither one up every now and then, but still, haven't recorded actual measures. Anyhow, to the best I can write it down...

Crust - I find crusts/pie shells a personal choice. Pick one you're in favor of.

Raisin filling:

    Amount dependant on size of pie/pan. Put raisins into pan to get about 1 to 1 1/2 inches depth.

    Put raisins in pot.

    Cover raisins with water (about 3/8" - 1/2" water over top of raisins in the pot).

    Add about 1/2 cup white sugar per 3 cups raisins.

    Bring to boil and simmer 10 minutes.

    Add corn starch to thicken to likeness.

    Remove from heat.

    Add lemon juice (about 1 tbsp per 2 cups raisins)

    Add vanilla, about 1 tsp.

    Add vodka (about 1/2 cup per 4 cups filling)

    Let sit 5 minutes

    Add filling to pie crust

Bake 10 min. @400F, and 20 min @325F. ~ Darrell Myskiw
