Beer Battered Fish

My recipe requires a leap of faith on the part of the fisherman as it has to be started the day BEFORE you catch the fish!

Beer Battered Fish

    1 1/3 cups of flour
    1 tsp kosher salt
    1/4 tsp freshly ground black pepper
    1 tbls melted butter
    2 beaten egg yolks
    3/4 cup flat beer

    Mix and refrigerate overnight.

    Fillet crappie, bluegill, perch, walleye, etc. roll in flour, dip in batter.

    Fry in Crisco until golden brown and crisp on the outside. Yum!

Do not use lite beer. Lite beer has no taste. Lite beer is not real beer but Hop Pop. Lite-Beer is an oxymoron. Do not consume lite beer!
