Streamside Trout or Salmon

I've already sent in one recipe but if more are allowed, I'd like to submit another. This one I've been using for a good many years but learned the basics from an Englishman in New Zealand. Therefore, I don't know its origin. Serve with wild dandilion greens (gathered when young) and boiled salt potatoes.

Streamside Trout or Salmon

    2 nice trout (trout or Salmon fillets)

    2 tbsp. butter

    1 tbsp choped parsley

    salt and pepper

    lemon

Place a large dinner plate over a pan of rapidly boiling water.

Place an inverted dinner plate on top and steam fish until done.

Sprinkle with parsely, salt and pepper. Squeeze some lemon juice over fish and steam an additional minute. ~ William Lavris
