Italian Fish Dinner

This is a dish my family and I call Italian Fish Dinner. It works with most any white fish, fresh or saltwater. We've used tilapia, catfish, flounder, and cod.

Served up with a green salad and a good Italian bread to soak up the olive oil, it's a very satisfying meal.

Ingredients

    1 cup olive oil

    1/2 cup parsley

    1 teaspoon crushed garlic (more if you like garlic)

    fresh ground pepper to taste

    juice of 1 lemon

    4-5 potatoes, pealed and sliced thin

    Any white fish fillets, enough to cover potatoes.

    Preparation

    Move oven rack to top of oven and preheat to 450 degrees.

    Mix olive oil, parsley, garlic, pepper and lemon juice, stirring till well mixed.

    Place potatoes into a baking dish and drizzle 1/2 of the olive oil mixture over the top, stirring into the potatoes.

    Cook uncovered until potatoes begin to brown and become tender, about 15 - 20 minutes; stir if needed to achieve even cooking.

    When potatoes are tender, remove dish from oven lay fish fillets on top of potatoes and cover with remainder of the olive oil mixture.

    Return to oven and bake until fish flakes, about 10 - 15 minutes. Cover with foil, if needed, to protect potatoes from burning.
