Broiled Chip-Coated Fish

I got this one when I was living in coastal North Carolina from my good friend, also a charter boat captain. It is so simple and can be used on a variety of fish.

This recipe was intended for speckled trout but it could be used on anything that swims!

Broiled Chip-Coated Fish

    1/4 cup of vegetable oil in a bowl

    1 bag of barbeque potatoe chips, smash the chips in bag till they are crumbs, then smash them again. pour contents of bag on a plate.

Pat dry fillets on paper towel.

Dip fillets in oil enough to coat them in the chips.

Broil 5-8 minutes or until done depending on thickness. ~ flybugpa
