Oven Fried Salmon
and Orzo Gratin

Here's one of the simplest, best tasting salmon recipies I've ever encountered. Then, of course, you need something simple to go with it! Hope they are enjoyed by you and many!

Oven Fried Salmon

    1/4 C veg oil

    2 T lemon Juice

    2 cloves garlic

    4 salmon fillets

    1 C herb stuffing mix

    1/2 C grated Parmesan cheese

    1/8 C parsley

Combine oil, juice, and garlic. Marinate fillets in mix for 30 minutes or more.

Combine cheese, stuffing mix, and parsley. Dredge salmon in dry mix. Place in greased 13x9x2 pan. Bake at 450 degrees for 15 – 20 minutes, or till fish flakes easily.

Orzo Gratin

    1/2 pound orzo

    3/4 cups chopped parsley

    3 garlic cloves minced

    salt & pepper

    1/2 cup evaporated milk OR half and half

    2 Tablespoons bread crumbs

    1/2 cup chicken broth

    1 1/2 Tablespoons cold butter

    1/2 cup grated Parmesan cheese

Cook orzo, according to package directions. Wisk garlic, evaporated milk and broth together with 6 Tablespoons Parmesan cheese. Add orzo, parsley, salt and pepper. Place in casserole dish. Combine remaining Parmesan cheese, and the bread crumbs, and sprinkle over the orzo mixture. Dot with butter. Cover and bake @ 325 for 1 hour. Serves 6. ~ BH
