Jane's Brunch Casserole
by Dick (Grn Mt Man) and Jane Taylor, Fincastle, Virginia

My wife came up with a new recipe a couple of days ago and it was delicious. This will take a little while; but, I think it's pretty good. Can always bake it at home and take it to the woods!

3/4 slices bread (used sourdough for this recipe)
1 lb. sausage
1 can asparagus
1 can cream style corn
5 eggs
1 cup Sharp cheese-shredded

7" x 11' casserole dish or a 2 qt. casserole dish

Crumble sausage in skillet and cook till all pink is gone.

Spray dish with "Pam" or rub with butter.

Take crusts off of bread and cut into cubes enough to cover bottom of dish.

Scramble eggs with a whisk in a large bowl and add asparagus and corn. Stir gently to mix well.

Spread sausage over bread cubes.

Pour eggs and veggie mixture over sausage and bread and sprinkle with the cheese.

Let stand for one (1) hour in frig or cooler if in the wilds.

Bake at 350° for one (1) hour. (Start baking in a cold oven to avoid breaking the casserole dish).

Serves maybe four hungry outdoors folks! ~ Dick (Grn Mt Man) and Jane Taylor
