Sweet Potato Salads

I tried to find an old recipe for Sweet Potato Salad we had while living in the south. No luck. Which is what happens when one has too many recipes and recipe books. However, with the help of Google.com I found one which is so close it doesn't matter. It is for a Mashed Sweet Potatos! It sounds strange, but really is very good. The second one I have not tried - but - if you have people with a sweet tooth, it should be a hit. Both are COLD salads and are from Cooks.com

Mashed Sweet Potato Salad

    Ingredients:

    2 (17 oz.) cans Taylors sweet potatoes

    1/2 c. Miracle Whip

    1/2 c. mayonnaise [I would substitute sour cream]

    1/2 c. celery, minced

    1/2 tsp. vinegar

    7 green onions, chopped fine

    6 sweet gherkins, chopped fine

    1/2 tsp. salt

    1/8 tsp. pepper

    Method:

    Drain sweet potatoes. Mash the sweet potatoes. Mix everything else together and combine well with the mashed sweet potatoes. Chill for a couple of hours.

Sweet, Sweet Potato Salad

    Ingredients:

    6 med. sweet potatoes, peeled

    1 (8 oz.) can pineapple chunks, drained

    1/2 c. sliced celery

    1/2 c. chopped pecans

    1 c. mayonnaise or salad dressing (Miracle Whip)

    1/4 c. sour cream

Method:

In large saucepan cook sweet potatoes in boiling water for 25-30 minutes, or until tender. Let cool, then cut into 3/4 inch cubes. In a large bowl, combine sweet potatoes, pineapple, celery, and pecans. Combine mayonnaise or salad dressing and the sour cream. Fold into salad. Chill if desired. Serves 8.
