No Bake Cheese Cake

Here's quick recipe for cheescake and a pic. This was posted on MSN.com (I think thats' where I found it originaly) Add a nice clear glaze over freshly sliced fruit arranged on top and it looks really nice. Try green kiwi and strawberries for Christmas colours, too.

Preparation time: 15 minutes

Refrigeration time: 2 hours

Cost: Reasonable

Difficulty: Very easy

Ingredients: Serves 4 - 6

    250 ml (1 cup) cream cheese (250 g package)

    250 ml (1 cup) whipping cream

    250 ml (1 cup) condensed milk

    2 leaves or 1 packet of gelatin

    Graham crumbs

    Butter

    Oil

    Berry coulis

Instructions:

Food-processor method
    1. Soften the gelatin in a little water;

    2. Place the cream cheese, cream, gelatin and condensed milk into the bowl of a food processor; process until smooth;

    3. Pour a little melted butter over the graham crumbs; pat them into a lightly oiled springform or high-sided tart pan;

    4. Pour the filling into the pan; refrigerate for at least two hours;

    5. Serve with the berry coulis.
