Jamaican Beef

Ingredients: Jamaican Beef

    2-3 lbs of beef roast or round steak, cubed

    2 egg whites, beaten

    2-3 TBS of Jamaican Jerk Seasoning (Walkerswood)

    1 onion, diced

    2-3 C beef bullion

    1 hot pepper (dried chilope)

    1 small can green chilis, chopped

    1-2 TBS olive oil

Method: Jamaican Beef

Cube beef. Mix beaten egg whites with Jerk, stir into beef. Refrigerate as marinade for a couple of hours, if not overnight. Heat olive oil in cast iron skillet. Saute chopped onion. Brown beef. Add bullion, pepper and chilis. Bring to low boil, reduce heat and simmer covered for an hour or so. Remove cover and reduce liquid to about half. Serve over Zatarain's Caribbean Rice Mix.

Cook's Note: I've made this three or four times and the ingredients change depending on the mood. I've added the Cajun trinity. Carrots and celery. The basic is listed above. It's a bit on the hot side but very delicious. My wife calls it a keeper. ~ John
