Seafood Stuffed Green Peppers

Robert L. Cody, Olympia, WA sent this one in from the 'South Sound Anglers'.

Ingredients:

    6 green peppers.
    1/2 cup crab, cooked drained.
    1/4 clams, cooked, chopped.
    3/4 cup celery, chopped.
    1/4 tsp salt.
    2 med. eggs, beaten.
    2 slices of bacon, chopped.
    1/4 cup salad shrimp, chooked.
    1/2 cup onion, chopped.
    1 cup soft bread crumbs.
    pepper to taste
    1/4 cup mozzarella, shredded

Instructions:

Core and seed peppers and simmer in boiling water for 6-8 minutes until almost tender. Fry bacon until crisp, add onions and celery and cook until celery becomes tender. Add bread crumbs and cook for an additional 3 minutes. Remove from heat. Add eggs, seasonings and other seafood. Mix well. Fill pepper shells with mixture and sprinkle with cheese on top. Bake peppers in hot oven (400 degrees) for 20 minutes. Serve hot. Makes 6 servings.
