SHRIMP REMOULADE

OK, you asked for it. Here is the ultimate holiday recipe. Put the bowl down on a table and run. People will trample you to get at this stuff. It's a lot of work, but worth it.

Publisher's Note: This didn't make the holiday issues, create one of your own to try it. It's worth it!

The sauce:

    1/3 cup chopped parsley
    1/3 cup chopped scallions
    1/3 cup chopped celery
    1/3 cup chopped dill pickle
    1 tsp capers
    1/4 cup olive oil
    1/2 cup dijon mustard
    1/4 cup creole mustard with seeds (spicy brown mustard is an OK substitute)
    4 tablespoons ketchup
    1 1/4 tablespoon horseradish
    1/8 cup white vinegar
    1 tablespoons lemon juice
    3 tsp worcestershire sauce
    a bit of salt and pepper
    3 bay leaves

Mix all ingredients and set aside

The Boil:

    2 quarts water
    1/2 lemon, sliced
    1 chopped onion
    3 cloves whole garlic
    3 bay leaves
    1 cup whole parsley
    3 sprigs tarragon
    2 sprigs thyme
    1/2 tsp peppercorns
    1/4 tsp cajun seasoning or cayenne

Boil all ingredients 10 min. Add 2 lbs shrimp. Boil for about 5 minutes. Cool and peel shrimp, mix with remoulade sauce and refrigerate 6 hours. Serve over a bed of shredded lettuce sprinkled with chopped tarragon. Serves 8 ~ TS
