The Mother of Invention?

I just got home from the grocery store and started to make my lunch for tomorrow, tuna salad. Well, I forgot to get mayonnaise. So I started to poke around and this is what I came up with.

Drain a can of tuna and chunk it up in a bowl. Dice up a small piece of cucumber and toss it in. Drizzle about 1.5-2 tbls of oil (I used olive) about a .5 tbls of dried dill and .5 tbls Mrs. Dash yellow cap, a couple grinds of fresh black pepper and coarse sea salt and ? tsp of ground chipotle pepper for smoke and kick. Mix thoroughly. Now for a bit of zing add .5 tbls of white vinegar and stire again. Let all this sit in the fridge over night. Scoop out into a good hard or sub roll with cheese, lettuce and fresh tomato. Lunch will be good tomorrow, I hope the catching will be, too.

A sandwich from the Pickle Barrel in Bozeman, MT when I am fishing that area. Any sandwich will do and you only need the half of sandwich to feed 2 people for lunch.

Slow cook a pork tender loin on a Webber grill.
1 pork loin
A rub of rosemary, oregano, thyme, pepper, sea salt.
Sliced garlic put in the tender loin.

With the leftovers: Cheddar bread, thin slices of tomato, Miracle Whip and lettuce.

Jam for the sugar and quick energy, whole wheat and a variety of seeds for continuing energy, and peanut butter for slow release energy to keep it all going for hours on end. And it tastes great, too !!
