Saturday Night Food?

So you are sitting on your deck on a Saturday night after a couple adult beverages…What types of food do you snack on?

Recently I have been eating smoked oysters and mussels. Last weekend I was told by one of our deck guests that the

smoked appetizers tasted good with green Tabasco Sauce on them.

They were correct.

That’s type of food that you have to like to even try. And I like it.

I’n not much of a fancier for smoked oysters so our deck snack ,right about cocktail hour, might include cold shrimp w/ horseradish style cocktail sauce. GREAT combo along with a VERY COLD gin martini up( stirred, NOT shaken). AND, having mentioned that, that WILL be today’s snack right after the Bears beat the Falcons ( sccore now- Bears over F 13-3 6:07 second)

At this time of year I like fresh salsa:
5 diced tomatoes
about half of a large sweet onion chopped fine
four jalapeno peppers
three cloves of roasted garlic mince very fine
tablespoon brown sugar
sprinkle with red win vinegar and let sit for a twenty minutes before serving with chips

lately we’ve been having these.

Proscuitto with honeydew caviar. made using a spherification process. a littel bit of work but it really blows my neighbors mind. plus it’s research for a class I’m teaching.

Lemme guess. Sphereification process ( making stuff round) is , in this case, using a very small, in fact, TINY, melon baller scoop ?

Roasted peanuts in the shell. Cold beer. Simple.

Broke down and made cheese burgers & fries. No beer, darn it.

Tortilla Chips, Refried Bean Dip and lots of salsa…

Chili Dogs are high on the list, as well.

no small scoop. juice the cantaloupe, add sodium alginate, load mixture into a syringe then drop them into a calcium lactate or calcium chloride solution. they form a sphere and start to gel on the outside. after about 1 min remove them and rinsee in clean water. the outside is gelled and the inside is still liquid.
My neighbor calls it “black magic”
