Probably the quickest fishing from Knoxville will be at the Clinch river by Norris. It’s about 30-35 minutes from Knoxville and is a tailwater fishery with browns, rainbows, and brookies. Most fishing is with a nymph (typically a zebra midge, size 18 - 22) under an indicator of some sort. TVA has a generation schedule online, you need to refer to that and be sure you’re going when they’re not generating. However, the trout section is long enough that there are places to fish where it takes the generation about 5 - 6 hours to reach, so you will have some flexibility with family.
Townsend and the Smoky Mountain National Park is gorgeous, but that will be a bit farther away - it typically takes me about 1:20 to get into the spots I like to fish. No stocking in the park - it’s naturally reproducing browns, rainbows, and brook trout. These fish will take dries, but most folks I know fish there with a dry and a dropper setup.
