Hummingbird Cake

Here is the recipe for Hummingbird Cake:

Hummingbird Cake

Do not preheat oven

3 cups all purpose flour
2t vanilla
1 3/4 cup + 3T sugar
4 medium bananas (3 chopped, 1 mashed)
1t baking soda
1-15oz can crushed pineapple, undrained
2t cinnamon
1 cup chopped toasted pecans
1t salt
1/4t cloves
3 large eggs, lightly beaten
1 cup vegetable oil

Grease and flour a 12 cup tube pan. Sift together dry ingredients. Add eggs and oil. Stir to evenly moisten. Stir in vanilla, then bananas, pineapple and pecans. Pour batter into prepared pan. Set oven to 350 degrees. Bake 1 hour and 20 minutes, or until toothpick in the center comes out clean.

Cool and frost with cream cheese frosting

Cream Cheese Frosting

1 lb box powdered sugar
1 cube of butter (1/2 cup)
8 oz brick cream cheese
1 T vanilla

Beat until smooth.

My wife’s version of this cake will make your tongue slap your brains out. The only cake better is my Mother’s Red Velvet cake …
