HOT SMOKED FISH - KIWI STYLE

This is an easy and tasty way to make the most out of a fish. I have used a Snapper but you can smoke just about any fish that will fit in your smoker.

Looks good Mike! I smoked up some salmon this Christmas and it was very nice! I tend to use manuka as well, but I’ve heard pahutakawa is very good too. I don’t think you can buy it though, just have to find some downed branches, etc, and make your own.

I can see it now, a fair trade agreement on fish smoking woods among fly fishers of different countries. Psst, trade ya two mesquites for one manuka.

If I was a fish eater, Mike, I’d add that recipe to my file. Sounds very, very good.
