I’m looking for reference material concerning the various animal hair used to tie flies.
I’d like to know the natural colors of Elk, Deer, Moose and the list goes on.
Then, does the thickness of each hair vary with the color?

If you get to thinkin’ you’re a person of some influence, try ordering somebody else’ dog around.
The natural colors of fur will vary with the individual animal, the area of the animal the fur was taken from,the time of the year the animal was taken, the area of the country where the animal was taken, and I’m sure other factors as well. The texture of the fur will also vary greatly also due to the above factors. So at best you will get a generalized color and texture.
