I was going to say one’s from a duck and the other’s from a goose, but no one would probably think that’s funny.
In actuality, the “CDC” from a duck or a goose has particular properties and oils that makes it float better than, say, turkey marabou or chicken whatever. The reason may be that duck and goose ‘butts’ sit on water so they would naturally have properties that make them bouyant. Chickens don’t sit on water, but they do sit on their butts.
By the way, we say ‘You can’t make CDC salad out of CDC . . . . ,’ oh, never mind.
