3 cups all purpose flour
2t vanilla
1 3/4 cup + 3T sugar
4 medium bananas (3 chopped, 1 mashed)
1t baking soda
1-15oz can crushed pineapple, undrained
2t cinnamon
1 cup chopped toasted pecans
1t salt
¼t cloves
3 large eggs, lightly beaten
1 cup vegetable oil
Method:
Grease and flour a 12 cup tube pan. Sift together dry
ingredients. Add eggs and oil. Stir to evenly moisten.
Stir in vanilla, then bananas, pineapple and pecans. Pour
batter into prepared pan. Set oven to 350 degrees. Bake
1 hour and 20 minutes, or until toothpick in the center
comes out clean.
Cool and frost with cream cheese frosting.
Cream Cheese Frosting
Beat until smooth.
