Raisin Pie |
Raisin filling:
Put raisins in pot. Cover raisins with water (about 3/8" - 1/2" water over top of raisins in the pot). Add about 1/2 cup white sugar per 3 cups raisins. Bring to boil and simmer 10 minutes. Add corn starch to thicken to likeness. Remove from heat. Add lemon juice (about 1 tbsp per 2 cups raisins) Add vanilla, about 1 tsp. Add vodka (about 1/2 cup per 4 cups filling) Let sit 5 minutes Add filling to pie crust
