Italian Fish Dinner |
Ingredients
1/2 cup parsley 1 teaspoon crushed garlic (more if you like garlic) fresh ground pepper to taste juice of 1 lemon 4-5 potatoes, pealed and sliced thin Any white fish fillets, enough to cover potatoes.
PreparationMix olive oil, parsley, garlic, pepper and lemon juice, stirring till well mixed. Place potatoes into a baking dish and drizzle 1/2 of the olive oil mixture over the top, stirring into the potatoes. Cook uncovered until potatoes begin to brown and become tender, about 15 - 20 minutes; stir if needed to achieve even cooking. When potatoes are tender, remove dish from oven lay fish fillets on top of potatoes and cover with remainder of the olive oil mixture. Return to oven and bake until fish flakes, about 10 - 15 minutes. Cover with foil, if needed, to protect potatoes from burning. Enjoy, ~ Terry Boyne
