Halibut Chowder/Clam Chowder

Here's another recipe that's sure to excite your taste buds. I've had chowder from Europe to the Far East and none compares to this batch. Not only can it be used for Halibut and Clams but any fish will do as well. It's a can't miss recipe if you just follow the directions. Even I can make it taste good.

Ingredients:

    1 lb. Bacon
    2 C. diced celery
    1 ½ C. diced carrots
    3 C. diced potatoes
    2 large onions
    4 C. water
    Halibut, cut in bite sized chunks*
    1 can Pet Milk
    1 pt. Whipping cream
    3 tsp. Salt
    1 tsp. Crushed thyme
    ¾ to 1 C. instant mashed potatoes

Method:

Fry bacon until crisp; remove and drain. Sauté celery, carrots, and potatoes in bacon drippings. Remove with slotted spoon and put in soup pot. Add water, salt, pepper, and thyme. Cook until tender. Add Pet Milk; bring to boil. Add halibut and simmer for 20 minutes. Add instant mashed potatoes and stir until dissolved and thickened. Add cream; heat. DO NOT BOIL. Stir in crumbled bacon...eat!

* If you are making Clam Chowder, substitute 8 cans of chopped clams. ~ Mike Harsh
