Balsamic Chicken (or Chicken in the Pot)

Well, not really a pot. How about in the oven? One pan, very little cleanup. This is one of our favorites, simple and very flavorful.

Ingredients:

    Chicken parts your choice.
    Bottle of Wishbone (or your favorite) BALSAMIC Dressing/Marinade.
    Spray Pam for frying pan.
    Veggies. Our usual choice is small red potatoes (or Yukon Gold) quartered, one per person (we're watching our carbos), one red and one green pepper chunked, large sweet onion in chunks, additional to taste, carrots chunked, parsnips...your choice (I've been wanting to try raw yams too.)

Instructions:

    Prep:
    Wash and clean chicken parts, place in large plastic bag with half or all of a bottle of the Balsamic dressing. Cut up veggies and also place in bag. Marinate at least an hour.

    Method:
    Fry marinated chicken parts on both sides (preferable in slotted pan) which can transfer to the oven.

    Cover browned chicken with marinated veggies and pop the whole thing into a 350 degree oven for 45 minutes. Or until chicken juices run clear and veggies are soft.

    The marinate will cook down and make a perfect sauce/gravy.

Serve with salad and hot rolls, fresh fruit for a feast. ~ LadyFisher
