Ice Box Cookies

This recipe is an old one, a hand-me-down from JC's mother. We don't see many 'ice-box' recipes these days, but this one is so good I need to pass it along to you. The trick with most ice-box recipes is they contain a lot of butter and need to be at least refrigerated over night to have the consistency needed to bake evenly. I've adapted the recipe a little, which makes it possible to bake them up later the same day you make them.

Here's the ingredients:

    2/3 C. white sugar

    2/3 C. packed brown sugar

    1 C. melted butter

    2 eggs, well beaten

    1 tsp cinnamon

    1 C/ chopped walnuts

    ½ tsp. soda

    1 tsp. baking powder

    2 C. flour

    dash salt.

Method

Combine wet ingredients, add dry ingredients and mix well.

Line a bread pan with plastic wrap.

Scoop the cookie batter into the lined bread pan and cover with extra length of plastic wrap.

Place in freezer until frozen. When ready to bake, preheat your oven to 400 degrees F.

Cut the frozen cookie dough lengthwise. You can put half back in the freezer for another day, (or unexpected company).

Slice into quarter inch slices and place on lightly greased cookie sheets, a couple of inches apart. They will puff up.

Bake for ten minutes.

Remove pan from oven and let rest for two minutes. Remove from pan. Cool and serve.
