I want to thank everyone for a great time at the Idaho Fish-In. Everyone was great and I am making plans to attend next year and for more than three days. My catch rate wasn't wonderful (1) but hope to do better next year. Also will be tying lots of REE's October Caddis this winter. Thanks to Ron I didn't get skunked. I also promised Vicki I would post my Chocolate Banana Nut Zucchini Bread recipe.

ZUCCHINI BREAD

3 eggs
1 cup vegetable oil
1 cups brown sugar, packed
2 cups grated, raw, unpeeled zucchini
1 over-ripe banana
3 cups all-purpose flour
1/2 cup milk
1 6 oz package of instant chocolate pudding(banana cream is good too)
1 tsp salt
1 tsp baking soda
2 tsps cinnamon
1 cup chopped nuts
NOTE: you can replace the milk and pudding with 6 oz bag of dried fruit)

Beat eggs. Add oil, sugar and zucchini, mix well. Add banana and mix well again. stir in flour, salt, soda and cinnamon. Add the nuts, milk and pudding. mix well again. pour into 2 greased loaf pans (9 x5x3 in). Bake at 350 degrees for 1 hour. Check with toothpick in center. If it is still doughy, bake about 10 min more. Remove from pans and cool on wire rack.
