I don't know if they would take the flies, but it couldn't hurt to ask...
Casting For Recovery also looks for donated flies for their outings. I tend to favor Project Healing Waters, though, as they are not as well known and thus need the help more. Both are worthy organizations.
Casting for recovery would also be my recommendation -- they work with women who are in differing stages of breast cancer. i will be volunteering for them this summer at one of their retreats.
However, there are several worthy organizations.
If you had a lot of flies or fly fishing related items to donate, I would donate some to all the groups mentioned. They are all very worthly.

Fly fishing and fly tying are two things that I do, and when I am doing them, they are the only 2 things I think about. They clear my mind.
