I'm not a big fan of Fly Fisherman. That said, I am rather fond of Fly Tyer. My favorite of all of them is Hatches Magazine though. Its incredibly well done - great photos, well written articles. Only problem with Hatches is that it is only published once a year. I'd highly recommend checking it out though. It is one of those magazines I find myself referring back to, again and again. Most definitely not a "throw-away" magazine.
