Welcome Sonny. Kudos to you for getting your grandkids involved. I'm not old enough for grandkids yet (well technically I am, my oldest is 1, but my son and daughter are my best fishing pals.
With regards to your First Winged Creature and the question of proportionality - here's a tip I picked up from an article by the Beatty's.
Put a hook similar to the one you're tying on in a pair of hackle pliers and use the hook for comparison purposes. For example, if you want the tail to be hook shank long, tie it in as best you can. Compare the length to the length of the hook shank of the extra hook - then adjust the length of the tail if necessary.
You can do the same thing for the wings. Tie them down, but check the length against the extra hook before you stand the wings up. If necessary adjust, check, then if still necessary, readjust.
You won't be tying as fast as AK Best, but your flies will have the proportions you want and look uniform.

Welcome back to fly fishing, hope the grandkids like it but don't force it upon them. Let them come around when they want to. They can always spin cast with a bobber and a fly attached if they want to rather than use bait.
