PARTRIDGE WITH WILD RICE

1 pk.  Brown & wild rice mix, with mushrooms
¼ c.   Flour
2        Partridge, split
2 T.   Oil
1 c.    Milk
¼ t.    Pepper
          Salt (to taste)

 

 

Prepare rice according to package directions.  Shake the split birds to coat in a bag containing the flour.  Cook the birds in a skillet containing the oil until browned.  Remove the birds and add milk, salt and pepper until heated well.

Now place the rice mixture and the heated milk mixture to a baking dish … top with the game birds.  Bake uncovered at 350 degrees or until the birds are tender.

Partridge can be substituted with quail or dove.
