We tried LF's Balsamic Chicken last
night from this weeks Articles. We found
it quite tasty. Fearing the recipe might
be a bit confusing, if not confuddlin', for
some of my Warmwater Buddies, I ran it
through my Redneck Dialectizer. Here it is
for those of us down here in gill and redear

Balsamic Possum (o' Possum in th' Pot) By LadyFisher
Wal, not zactly a pot. Howsabout in th' oven? One pan, mighty li'l cleanup. This hyar is one of our fav rites, simple an' mighty flavo'ful, ah reckon. Ingredients: Possum parts yer choice. Bottle of Wishbone (o' yer favo'ite) BALSAMIC Dressin'/Marinade. Spray Pam fo' fryin' pan, as enny fool kin plainly see. Veggies. Our usual choice is small red patootees (o' Yukon Gold) quartered, one per varmint (we is watchin' our carbos), one red an' one green pepper chunked, large sweet onion in chunks, addishunal t'taste, carrots chunked, parsnips...yer choice (I've been wantin' t'try raw yams too.) Instruckshuns: Prep: Warsh an' clean possum parts, place in large plastic bag wif ha'f o' all of a bottle of th' Balsamic dressin'. Cut up veggies an' also place in bag, acco'din' t' th' code o' th' heals! Marinate at least an hour. Method: Fry marinated possum parts on both sides (preferable in slotted pan) which kin transfer t'th' oven, as enny fool kin plainly see. Kever browned possum wif marinated veggies an' pop th' whole darned thin' into a 350 degree oven fo' 45 minutes or till possum juices is a runnin' clear an' veggies is sof'. Th' marinate will cook down an' make a puffick saooce/grevy. Serve wif poke salad an' hot rolls or Kornbraid to sop up th' drippin's ~ LadyFisher
