Doug. Thats a nice article. Thanks. I think the yellow perch is the best tasting of all the panfish. there are two species of this fish, one in North America (Perca flavescens) and another in Europe (Perca fluviatilis). The guys in Europe get to catch the big ones as some of their perch can weight up to 8 lbs.
