All of my caddis dries now are simple CDC ties. Wing of natural CDC, body of dubbing of the appropriate color, on a dry fly hook. Simple, fast, and it works as well as any other pattern I have ever used, and better (for me) than most.
DG's CDC caddis has become a favorite of mine, but the X-caddis is at the top of my list. Both are quick to tie and VERY effective.

Soft hackles. If the fish are keying on dry's and exclusively feeding on them (which is rarely the case), I grease a
Gray SH, and grease the leader. Looks like a drowned adult.
Add a split shot, and I am right back into nymphing.
I've always had a soft spot for Whickham's Fancy on a bright day. Otherwise, a deer hair caddis size 12 or 14 works well for me.

That pretty much sums it up. Simple to tie yet very effective! Not that any other recommendations aren't effective either but there are so many ways to fish this fly. One way some don't think to is to sink it and swim it. I do this when my Sparkle Emergers or Pupa are too beat up (or loose them all) by the fish and loose their wing.
