I struggle with getting that knot to seat properly using 12 lb mono. How do you get it tight with heavy bite tippet?

adjustable loop knot for me on everything except when dbl clinch knot is needed for weightless dreads on 8lb tippet
Non slip loop, same as DickM.

Non slip loop, a uni knot or Homer Rhodes depending on the fly & whether fishing top water, mid or bottom for different fish.
Problem with the figure 8 knot, as well as, the clinch and similar knots is that they cinch down on the eye of the hook. In saltwater it is important to have good action on the fly, which is best accomplished by a loop knot.

To close the knot properly, I like to dab a bit of Chapstick on the winds and nothing beats a good set of pliers to pull first the tag and main line a bit, then the hook and main line then back to the tag and main line again. (Hint: If it appears that the loop may be a little too large, pull harder on the tag end to decrease the loop size. If the loop seems to small, pull harder on the main line when closing.)
Again, the key to this knot in 30 Lb line and greater is a good set of pliers.
Hope this helps,
