    Man I look good in those pictures....

    I had a blast on this much needed vacation. I didn't get mauled by a mountain lion so that was a plus too. I really need to spend more time in Idaho and Montana! Here are the few pics I took, wish I had more.

    Default Our first Fish-in

    The fishing and the members lived up to all of David L's hype. A fun group that was willing to share just about any type of knowledge you asked for. Fishing was great for me personally because I have spent so much time fishing for stripers and saltwater fish that I was a bit intimidated by river fishing. Shouldn't have worried.

    The ladies day out was great for Linda. She is just getting started and caught her first fish with lots of support from all the gals. She didn't want to leave at the end of the week and is already planning her next outing.

    I did promise to post the corn casserole recipe which follows:

    CORN CASSEROLE
    Ingredients:
    1 can whole corn with juice
    1 can cream style corn
    1/2 cup melted butter
    1 package Jiffy corn bread mix
    1 cup sour cream
    2 eggs
    1 cup cheddar cheese

    Preparation:
    Mix all ingredients together, except cheese. Bake at 350 degrees for 25-30 minutes. Add cheese on top and bake for 8-10 minutes more.

    You prepared it in a dutch oven? How many coals?

    Now you are putting me on the spot. My memory says 9 on bottom and 28 on top. Shooting for a 350 degree bake. But if you ask David L he will tell you that my memory is suspect!
    If you need an absolute I will need to get back to you on that one. I am glad you liked it. It was a double recipe in a 14 inch oven. Richard's bake tators were not to be missed. Simple and great!

    Since that was a success I need to work on my fishing photography. I have no pictures of fish at all for that trip. I slipped while trying to land a salmon on an Alaskan trip an drowned my favorite camera in the late 80's and I haven't been brave enough to take one to the water since! I know I could use a baggie but still . . .

    Steve, they make these waterproof digital cameras these days...

    You could always make another batch of the casserole and then write down how many you used!

    See you there next year, hopefully.

    Did a quick check and the answer is 9 on bottom and 22 on top. But it that is for a 14" oven. Different oven different coal count. But you already know that. As for that camera . . . the holidays are approaching.

    Default First Fish-In

    I want to thank everyone for a great time at the Idaho Fish-In. Everyone was great and I am making plans to attend next year and for more than three days. My catch rate wasn't wonderful (1) but hope to do better next year. Also will be tying lots of REE's October Caddis this winter. Thanks to Ron I didn't get skunked. I also promised Vicki I would post my Chocolate Banana Nut Zucchini Bread recipe.

    ZUCCHINI BREAD

    3 eggs
    1 cup vegetable oil
    1 cups brown sugar, packed
    2 cups grated, raw, unpeeled zucchini
    1 over-ripe banana
    3 cups all-purpose flour
    1/2 cup milk
    1 6 oz package of instant chocolate pudding(banana cream is good too)
    1 tsp salt
    1 tsp baking soda
    2 tsps cinnamon
    1 cup chopped nuts
    NOTE: you can replace the milk and pudding with 6 oz bag of dried fruit)

    Beat eggs. Add oil, sugar and zucchini, mix well. Add banana and mix well again. stir in flour, salt, soda and cinnamon. Add the nuts, milk and pudding. mix well again. pour into 2 greased loaf pans (9 x5x3 in). Bake at 350 degrees for 1 hour. Check with toothpick in center. If it is still doughy, bake about 10 min more. Remove from pans and cool on wire rack.
