Hmm...mine were never brittle...that honor goes to my cheap peacock herl...
Maybe try soaking the portion of the tail you plan to use in warm water for about 10 minutes prior to tying?
Are they old ones? I think the best idea might be to throw those out and get some new ones. Soaking them, like Cold said, may soften them up enough to wrap them on the hook but they will probably get brittle again when they dry out and your flies will tear up easily.
