As far as bonefish, I'd head up to the upper Keys around Islamorada, but you can catch bones around Key West.

I always drive from Ft.Lauderdale airport and stop at the Wide World Sportsman in Islamorada, and get a fish sandwich and a beer next door.

it's right by where the cruise ships let out so expect to see some goofy folks in the shop.
Their prices on saltwater saddle hackles are usually great.
