Right now! (September ain't bad either)
Right now, like FlatsDude says, is a good time to fish ... but go early. If you're fishing the flats, the water warms up pretty fast. Especially over sea grass as it's dark. Plus the sun can be brutal on anglers this time of year. Sunscreen, hat and ample water is a must ... the rest is just details.
