That's how I tie my minnow and baitfish patterns as well, except I leave out the last step with the 5-minute epoxy. I just super-glue (Zap-A-Gap) the head and eyes. I also use the High-Tie method for deeper bodied imitations such as shad and sunfish.
I use Enrico's Sea Fibers for the hair, and Prismacolor markers for extra color and markings. These are deadly, from the 1" crappie minnows (I tried doing Gummy Minnows for these, but Sili-Skin is very expensive,and the results were lifeless looking, like a jig), to the 4" baitfish, shad and sunfish imitations I use for stripers (freshwater) and large bass.
I highly recommend these materials and techniques.
