I skinned my roosters today. Thanks to everyone who gave me advice. I ended up with two nice saddle patches and some useable neck feathers. I especially like the tails, they are a nice irridecent black, about 4"-6" long. I can see them as the backs of some salt water streamers. I did determine the best knife to use is one of those utility knives with the disposable blades. They are VERY sharp, and if they get dull its easier to change the blade wrather than sharpen.
