Interesting Design Thoughts on two caddis patterns

If all of you tie the E/C or Harrop's Hair Wing or any of these similar patterns in very small sizes, like #18-24, do you still use hair for the wing or do you switch to CDC or maybe poly?

I watched a guy at a show tying really tiny caddis, with a parachute hackle wrapped around the base of a hair wing. He omitted the body altogether. So it was just a hair wing and parachute hackle on a hook. It was a very simple fly and he could really crank them out quickly.
