I tried to eat brown bear once... I love black bear and we always save all of the meat from them... We often have as many as six black bears a year. Black bear though goes bad in the freezer in about 6 months. Great, to bad, to inedible, very fast. I usually take at least a couple bears a year and turn them into Chili Verde (or Chili Bearde as we call it) which we can and then it keeps virtually forever. The new retort bag canning has proven very versatile and I use it now. Makes for very quick and easy meals.

A friend's reply to the same question always cracks me up: "I find a 40 fathom saltwater soak leaves bear meat tasting remarkably like shrimp."
