    Default SUMMER DELIGHT - What's cooking - Aug 29, 2011

    SUMMER DELIGHT

HOME GROWN TOMATOES WITH BALSAMIC AND OIL

I wait in anticipation for this time of year, when the tomatoes are fully ripe and ready for the picking the slicing and the eating! And oh what a feast to lay out for yourself and friends if you have any there with you. The best part there is no cooking involved.

You forgot the fresh basil leaves between the slices. This is called ensalata caprese, and you must use fresh balls of mozzerella, not that sliced Kraft stuff. The Roland brand sells a good balsamic for about $12 for an 8oz bottle it's quite good for a resonable price. The same lable has good olive oil for $15 for the same size. This is classic and a wonderful treat. "Died and gone to Heaven" time, no joke.
Sometimes the other ones go away, but I'm always right here.

I've been privileged to have eaten it as well, a real treat!
