    Here is the borscht recipe I used: http://www.simplyrecipes.com/recipes/borscht/ . I didn't follow the recipe exactly. I had no beef shank so I cubed some sirloin steak that I did have and substituted two tablespoons balsamic vinegar for the three tablespoons of red wine vinegar. I cooked it In a pressure cooker so I cut the cooking times in half. I don't know if I should have cut the times more but it did come out good. In looking for a good borscht recipe I found there are about as many ways to make it as there are cooks so I felt free to improvise a bit.

    60 ounces chicken broth

    4 cubed chicken breasts

    one pound Jimmy Dean Hot Sausage

    4 ounces button mushrooms

    6 ounces Stozzapreti Pasta

    3/4 small can hot rotel

    6 ounces tomato juice

    10 ounces diced tomatoes

    2 stocks fresh celery diced

    14 small carrots

    One large yellow onion diced

    salt/pepper/garlic powder

    Slow cook in crock pot 9 hours...add pasta one hour before serving.

    4 -6 lbs pork shoulder or 4 -6 lbs pork butt
    2 tablespoons caraway seeds
    1 tablespoon salt
    2 teaspoons ground pepper
    2 tablespoons cooking oil
    3 medium onions, roughly chopped
    2 carrots, peeled and chopped
    1/2 cup water or 1/2 cup stock or 1/2 cup white wine or 1/2 cup beer

    Mussels, Jumbo Shrimp, Morel Mushrooms, Steak Fries and Brussel Sprouts





    Steaming the Mussels now.
    In an hour will lay them out in
    a pyrex pan put a little marinara
    and mozzarella on the mussels
    in the shell and bake them for 10 minutes.


    Jumbo shrimp placed in another pyrex bowl
    with a stick of butter and some minced garlic
    and bake for 25 minutes. Put the steak fries in same oven.

    Put the brussel sprouts in a covered pyrex pan with a little
    butter and salt and pepper and microwave them for
    5 minutes.

    Cut up your morels in half. Lightly salt and pepper and fry in butter until slightly crispy.
