I had no beef shank so I cubed some sirloin steak that I did have and substituted two tablespoons balsamic vinegar for the three tablespoons of red wine vinegar. I cooked it In a pressure cooker so I cut the cooking times in half. I don't know if I should have cut the times more but it did come out good. In looking for a good borscht recipe I found there are about as many ways to make it as there are cooks so I felt free to improvise a bit.
