Mom always took her excess tomatos (and there's usually A LOT of them), made a very basic sauce with just the tomatos, onion, celery, and green pepper, then canned it in quarts. Later you add Italian spices and it's speghetti sauce, chili spices meat and beans and it's chili, okra, sausage and cajun spice and poof, it's gumbo. You get the idea.
