I want to second Tenn. Tech. I've met a number of fisheries biologists over the years and all had great things to say about TN Tech. The two primary fisheries biologists handling the fisheries in the Great Smoky Mtn Nat. Park are both TN Tech grads.

Others I've run into over the years work for the NC Wildlife Resources Commission. Most were not TN natives but knew that they had a great fisheries program.

The difference between grad and professional schools as someone pointed out is that you usually can get money (Grad Asstship, tuition waiver, in-state tuition for out of staters). It may not be enough to totally live on but it is better than the debt that law and med students have at graduation.
